INGREDIENTS – WHAT YOU NEED

  • Blueberry Muffin Box Mix (look for a muffin mix that includes a can of wild blueberries
  • Quick Cooking Oats
  • Brown Sugar
  • Canola Oil
  • Milk
  • Eggs

Instructions

  1. Preheat oven to 375F/190C. Spray two large baking sheets with cooking spray or line with parchment paper and set aside.
  2. Wash blueberries in a colander; drain and allow to dry on paper towels.
  3. Meanwhile, in a medium bowl combine muffin mix, oats, brown sugar, canola oil, milk, and egg. Mix well.
  4. Gently fold in blueberries.
  5. Use a tablespoon to drop dough onto prepared baking sheets. If the dough is very sticky, just keep your hands and your tablespoon wet so that the batter doesn’t stick too much.
  6. Bake for 10-15 minutes, or until just set.
